Throwback to this fudgy, gluten-free, vegan brownie that I'd made a few months ago following @bakemindfully's super easy recipe from her blog. Just 7 ingredients including salt and water! 🍫 I halved the recipe and used Muscovado (unrefined) sugar instead of castor sugar and an infused olive oil from Portugal instead of refined oil. And I used the double boiler method as I don't use a microwave. 🫕 So fudgy, so good!! 😋 The toughest part was to wait for them to cool!
Ordered this delish Funghi pizza 🍄 from Pete's Pizzeria topped with my fave Soft Spot mozzarella! I hadn't heard of Pete's before but saw a photo on the @softspotfoods page and just had to try them out. We got 3 pizzas:

Vegan blue cheese sandwiches!! 🤤🤩 Polished off the vegan blue cheese by Sheese @buteislandfoods that my friend @hemali2 had gifted me! We had some sprouted moong dal bread from @merkonfekt in our freezer, so grilled that + mushrooms + onions + capsicum + Italian herbs... Such a great combo! @veganbombayboy had his with @softspotfoods mozzarella...our favourite local cheese!
Yesterday was my 200th day of eating home food! 🗓️ This is the first time in my adult life that I've been away from restaurant food for this long. 😃 My last meal out was thankfully a wonderful meal at Yauatcha on 7 March. I'd started staying home soon after. In pre-Covid times, @veganbombayboy and I would be eating out or ordering in at least 2-3 times a week. I can't believe that it's been 200 days and we haven't ordered a meal from anywhere...not out of fear but just cos we've had such great food staying with my parents (and we didn't have to cook). 😅 We've come back to the apartment we stay in for a few days so back to some cooking! We made this basic pasta yesterday using stuff from our pantry - Is bought some of the ingredients in Italy but you could easily use locally available herbs. Keep in mind this is not an Indian-y saucy pasta. Nothing extraordinary, just an easy recipe especially for those who like quick, minimalistic recipes. 😁🙋🏻♀️
Since many of you asked for my mom's vatana (green peas) recipe, here it is! I don't have exact measurements but I'm sure it'll be super easy to follow for intuitive cooks. 🧑🏻🍳👨🏻🍳
